French toast with strawberries

Strawberry compote ingredients

60 ml (4 tbsp) butter 

100 ml (about 7 tbsp) brown sugar 

250 ml (1 cup) quartered strawberries 

1 pinch powdered star anise

60 ml (2 tbsp) François (fine strawberry liqueur) or port wine


French toast ingredients

2 eggs

250 ml (1 cup) milk

100 ml (about 7 tbsp) sugar

1 drop of white vanilla extract

8 slices of bread

15 ml (1 tbsp) butter

1- Melt the butter, add the brown sugar, quartered strawberries, star anise and François. Simmer over very low heat for about 5 minutes, until the strawberries are nearly soft. Drain and set aside.

2- Beat the eggs with the milk, sugar and vanilla. Dip the slices of bread in the mixture and fry them in butter until they are golden.

 

Assembly

Place one slice of French toast on a plate, add the strawberry compote and top with another slice.
